Bryndza Spread (Bryndzová Nátierka)

Ingredients: bryndza, butter, paprika, onion, bread or rožky Prep Time: 10 minutes Another popular thing to do with bryndza, the Slovak national cheese, is to make a spread (nátierka) commonly known as šmirkáš. I made it using the fake bryndza – the Israeli style Feta cheese from Trader Joe’s. Finely slice onions (I like using spring onions and I used three of them) and combine them with about equal amounts of bryndza and butter. Also add a spoonful of paprika. You should use less than what I have here.

Mid-afternoon Snack (Olovrant)

Ingredients: bread rolls, butter, honey, jam, hot chocolate Prep Time: 2 minutes You can use the freshly baked rolls (čerstvé rožky) anywhere you would use regular bread. They go great with soups, spreads, and you can even turn them into a butter and cheese sandwich. Another of my favorites is to top them with butter and honey or jam, and make a quick mid-afternoon snack. Such a mid-afternoon meal is called olovrant in Slovak. Fried Hamburger (Fašírka)

Bread Pie (Žemlovka)

Ingredients: 2lb apples (or other fruit), 1L (4 cups) milk, 4 eggs, 10 bread rolls, 1lb farmer’s cheese (about 2 cups), powdered sugar, handful of raisins, butter, bread crumbs for dusting the baking pan Prep Time: 30 minutes + about 1 hour for baking Here is the recipe for žemlovka. The word žemla means bread roll so the closest I could come up with when translating the name of this delicacy was “bread pie”. Toast (Hrianka)

Ingredients: good hearty bread, clove of garlic, salt Prep Time: 5 minutes I don’t know if this is how toast is served everywhere in Slovakia, but I grew up eating toasted bread with garlic scraped on it. We called it “hrianka”. It’s really tasty. The garlic gives the bread creamy, buttery taste. No butter needed. It’s really easy to prepare.
