Spanish Rolls (Španielske Vtáčky)

spanielske-vtacky

Ingredients: 8 beef steaks or chicken breast slices, 2 hot dog, 2 hard boiled eggs, 2 dill pickles, paprika, onion, black pepper, salt, mashed potatoes or rice Prep Time: about an hour Alena from Žiar nad Hronom sent me recipe and pictures of her mom preparing španielske vtáčky, a delicious dish consisting of meat steaks filled with egg, hot dog and pickle. I have to admit that for the longest time I thought the name of this dish was španielske vtáčiky (notice that extra i), which would mean “little spanish birds”. But it’s not. I have no clue what vtáčky Read the Rest…

Chicken on Salt (Kura na Soli)

chicken baked on salt

Ingredients: chicken, 2 lbs salt, side (rice works great) Prep Time: 10 minutes of prep, then 2 hours for baking In this recipe I show you how my mom bakes chicken. This’s got to be the easiest (and tastiest!) chicken recipe ever! Just place the chicken on a bed of salt, stick in the oven, serve. No basting required and all you need is one whole chicken and about 2lbs of salt. 2lbs of salt?? Won’t the chicken be insanely salty? No, not at all. The salt acts to absorb moisture from the air, and the dry air turns the Read the Rest…

Chicken Noodle Soup (Kuracia Polievka)

chicken noodle soup

Ingredients: few carrots, parsley root, few small onions, one small chicken, oil Prep Time: About 30 minutes My grandma makes, hands-down, the best ever chicken noodle soup. Part of her secret are her hand-made noodles. The other part is the recipe, which is posted here. As you will see it’s quite simple. The Slovak version of chicken [noodle] soup (kuracia or slepačia polievka) is bit different from the American kind. First, it is always clear and “brothy”. Second, Slovaks use slightly different ingredients. While celery is an integral part of the American version (or at least the canned version I Read the Rest…

Risotto (Rizoto)

risotto

Ingredients: 1.5 cups rice, cooked chicken, marjoram, ground black pepper, onion, salt, oil Prep Time: 30 minutes Risotto (rizoto) is another Italian dish like spaghetti carbonara that is tremendously popular in Slovakia. This dish is best prepared with cooked meat, so it’s best made after making soup. We used the chicken used in preparing the chicken noodle soup. But other types of meat work as well. And if you don’t have cooked meat to begin with, simply start off by browning fresh meat with the onions, and then cooking it along with the rice. Follow the easy recipe below to Read the Rest…

Chicken Paprikash (Kurací Paprikáš)

chicken paprikas

Ingredients: one whole chicken, half of a small onion, 2 small tomatoes, quarter of green pepper, two cups flour, one cup sour cream, salt, paprika, halušky Prep Time: about 2 hours Chicken paprikash is a dish that is not only truly delicious, but is also really cheap to make. I spent 11 dollars (tax included) at my local grocery store for all the ingredients. This total include potatoes for halušky. Flour and paprika were not included in this tally, since I already had these at home. But, these two items added at most another dollar to the total. We ended Read the Rest…
